What's for dinner tonight?  Well believe me, it should be something scrumptious!  Here are some delicious, simple recipes that we have discovered lately.  Try one out, you might love it:

Sweet, Sweet Crepes in the morning...


Sweet, Sweet Breakfast Crepes:

Ingredients
2 eggs
1 cup all-purpose flour
1tbsp sugar
1/2 tsp salt
2 tbsp butter (melted)
1 1/3 cup milk

Preparation
In a large bowl, mix all the crepe ingredients together. (Make sure to mix thoroughly getting all the lumps out.)
Heat a skillet at a medium-low temperature and brush with a small amount of oil. (You can use any size skillet to get the size crepe you want.)
Heat skillet at a medium-low temperature.
Once the skillet is hot, pour some of the batter into it and immediately start to swirl the pan in a circular motion until the batter has spread out evenly on the pan.
Put the pan back onto the heat and let sit for about 2-3 minutes, or until the edges start to brown.
Flip over. (If you make a hole when flipping, just add a tiny bit of the batter to the spot to cover it up)
Let sit for about 2-3 minutes and remove to a plate.

To make the whipped cream:

Ingredients
1 cup heavy cream
1 tsp vanilla extract
1 tbsp confectioners' (powdered) sugar

Preparation
In a large bowl, whip the heavy cream (preferably with a beater) until stiff peaks are just about to form (starting to thicken).  Beat in vanilla and sugar until peaks form.  Make sure not to over-beat, cream with then become lumpy and butter-like.


...and Delicious Grilled Halibut in the evening!
 

Delicious Grilled Halibut:

Ingredients
1 clove garlic minced
1/3 bottle lemon juice or juice from 1/2 lemon
salt and pepper to taste
1tbsp olive oil
1 lb. halibut steak
1 tbsp basil chopped
1 tbsp parsley chopped
1/2 tsp onion powder

Preparation
Combine lemon juice, garlic, salt, olive oil, basil, parsley, salt, pepper and onion powder.  Put in Ziploc a bag.  Place halibut steak in bag and marinate in the refrigerator for at least 10 minutes but no more than 1 hour.  Grill halibut for about 5 minutes on medium heat each side.

Supreme Green Beans and Tomatoes:

Ingredients
16 oz canned or frozen green beans, or 1 lb fresh
3 strips bacon cooked and crumbled - RESERVE GREASE
1 clove garlic minced
1/2 onion chopped
14.5 oz tomatoes petite diced or 1 can of diced tomatoes
salt and pepper to taste
1 tbsp Parmesan cheese

Preparation
Cook bacon strips until crispy and put on a plate. Reserve grease. Crumble bacon
If cooking fresh or frozen green beans, place in a medium sauce pan with enough water to cover them and 1 tsp of salt. Bring them to a boil and boil for two minutes, drain.
Add green beans and diced tomatoes to the skillet.
Simmer for one minute and add salt and pepper to taste.
Transfer the green beans to a serving dish and top with Parmesan cheese.

Cheesy Scalloped Potatoes:

Ingredients
1/4 cup onions chopped
2 tbsp butter
2 tbsp flour
1 1/4 cup milk
1 cup cheddar cheese grated
salt and freshly ground pepper to taste
3 potatoes peeled and thinly sliced

Preparation
Preheat oven to 350 degrees.
Cook onion in butter, until soft.
Add flour.
Cook for 2 minutes, whisking.
Whisk in milk.
Cook until thick and bubbly.
Remove from heat and add 3/4 cup of cheese, stirring until melted.
Season with salt and pepper.
Layer half of the potatoes in a 8x8 baking dish and sprinkle with salt and pepper.
Cover with half of sauce.
Layer remaining potato slices on top of sauce and season.
Top with remaining sauce and sprinkle with remaining cheese.
Bake, covered, for 30-50 minutes, or until potatoes are tender.



Nice! This is such a delicious meal and the crepes in the morning are amazing.  Don't just take our word for it, try it out for yourself.
